Rinse it well, use the right vinegar mix, and cool it slightly before spreading. Use the paddle and go thin and even across the nori.

Because nori goes stale fast once opened. Keep it sealed in an airtight bag or container. If it’s already soft, you can lightly toast it over a flame or in a pan for 2–3 seconds to crisp it up.
